Chillin’ with Gigi’s Ice Lollies

Gigi’s Ice Lollies is the newest food stand in downtown Fargo and let me tell you, these artisanal popsicles are amazing!

My inner skeptic wondered if the very idea of artisanal popsicles was perhaps a bit twee, but owner and Executive Lolly-Gagger Nicole Kolbe (I’m not making this adorableness up, that’s what she calls herself) has made me a believer. I was blind but now I see. Or eat. Whatever — these things are good.

Mixed metaphors aside, you should try one. They’re $3 each or 2 for $5. Nicole is downtown with her cart on Saturdays and Sundays, serving up two of the following flavors. (The little Ⓥ means it’s a vegan option.)

2. Ⓥ Blackberry Mint
3. Honeyed Peaches & Cream
4. Ⓥ Avocado, Lime & Tarragon
5. Ⓥ Frozen Hot Chocolate
6. Lemon Ricotta
7. Vietnamese Coffee
8. Ⓥ Strawberry Basil

Brynn and I checked out the cart as we enjoyed some rare kid-free time (thank you amazing husbands — we love you!) at the Downtown Fargo Street Fair and I had a hard time deciding between the three flavors on offer, banana splits, frozen hot chocolate and lemon ricotta. (Yeah, I know I said she serves two flavors, but this is a special occasion),

Gigi's Ice Lollies

The frozen hot chocolate was very good — I loved the dimension that a hint of coconut added — but the lemon ricotta that Brynn ordered with such confidence was over the top brilliant. You really should try it. Nicole said that another shop’s version of that flavor was what got her into the business, so if it’s good enough to inspire an entire enterprise, you know it’s gotta be good.

There’s still time to grab one today if you’re in the area – the Downtown Fargo Street Fair goes until 5:00 p.m. She’s located right in front of Unglued at 408 Broadway. Just look for the rainbow umbrella and tell her that Prairie Style File sent you!
