There are lots of reasons to check out Josie’s Corner Cafe & Bake Shop, a sunny little shop on the north edge of downtown Fargo, but I only need one — the cookies.
These thick, cake-like pumpkin cookies with thick cream cheese frosting are the best I’ve ever had. I can never walk by without buying one. (And a few for Derrick, of course — he likes the soft chocolate cookies and the gingersnaps that glitter with sugar.)
Everything in the bakery cases is made from scratch (most from the owner’s Grandma Josie’s recipes) and it’s all delicious in that simple, farmhouse kitchen kind of way.
As an added bonus, they do custom baking as well, which means you can bring in your grandma’s recipes and they’ll make them for you. (Business is especially brisk around the holidays, so keep them in mind if you want to impress your family on Easter Sunday)
But Josie’s Corner is more than just baked goods. It’s also a cozy breakfast and lunch spot that’s popular with the downtown office crowd as well as families and groups of friends that linger over coffee.
Their melt-y panini and thick, hearty soups are especially great.
