It’s just not summer until I have a fresh fruit tart.
There are other desserts in the world, but the fruit tart has a special place in my heart. The buttery crust, perfectly chilled custard, juicy berries and thick slices of kiwi just taste like summer. My go-to place is Nichole’s Fine Pastry in downtown Fargo.
Everything pastry chef and Glenburn, ND native Nichole Hensen makes is incredible — flavorful and fresh — but nobody talks about how incredibly sexy these desserts are.
The presentation is as beautiful as anything I tried in Paris — and trust me, I did some extensive sampling — but that’s only part of the appeal.
Yes, the dark chocolate mousse in this Chocolate Feuilletine Cake is decadent and the presentation is striking. But it’s also a fabulous indulgence, which I think we all need far more of in this life. There’s nothing utilitarian about this food — it’s all about pleasure.
You also get to enjoy the experience of eating something beautiful in an awfully sensuous environment. The front door has a charming creak, the shop always smells of thick, rich butter and the creamy yellow walls are hung with a rotating collection of art.

Depending on the time of day, a glance around the dining room might reveal a group of friends chatting over coffee, wide-eyed children surveying the dessert case or downtown workers enjoying a particularly transcendent lunch — perhaps a sandwich on a croissant or fresh pasta salad — while reading the paper. If you’d rather dine al fresco, the tiny sidewalk patio offers prime people watching.
Nichole’s Fine Pastry is also a brilliant date spot. It’s open late on weekends and the dining room feels even more intimate at night. And the small tables make it easy to share a decadent little treat or linger over espresso or a glass of wine.
