The Easiest Superbowl Party Food Ever

I keep seeing pictures on Pinterest of elaborate Super Bowl party ideas — tiny pigs in a blanket, elaborate cakes and tables draped in team colors.

Why bother when the the entire point of a Super Bowl party is sitting around and staring at a TV? I just concentrate on what can be refilled quickly.

Here are three of my favorite recipes for a lazy Super Bowl Sunday.

Rotel and Velveeta Cheese Dip
Cheese Dip
1 block of Velveeta Cheese (32 oz), cubed
2 10 oz cans of Rotel tomatoes with chiles (undrained)

Melt in a crockpot on low, on the stovetop or in a microwave safe bowl, stirring often
Serve with chips
(See, I told you this was gonna be easy!)

Hummus and Veggies
Homemade Hummus
1 14 oz can of chickpeas (liquid reserved)
1 clove of garlic
1/4 cup of olive oil
1 tablespoon of lemon juice
1 teaspoon cumin

Combine ingredients in a food processor and blend until smooth, adding reserved chickpea liquid until you get the consistency you want.
Serve with pita bread or vegetables

Chicken Soft Tacos
Crockos (Crockpot Chicken Tacos)
Recipe courtesy of Eric Harris, via Reddit

6 boneless, skinless chicken breasts, thawed
2 15 oz jars of hot salsa (it adds flavor, not heat)

Cook in the crockpot on low for four hours OR on high for eight hours
Shred chicken
Serve with cheese and tortillas

Done! Now just put some beers and soda on ice and you’ve got a party.
