The Frackin’ Hungry Mobile Food Truck Hits The Road

The Frackin’ Hungry Mobile Food Truck is headed east!

The colorful truck, with its oil field theme, cheeky mascot (designed by Fargo artist and perennial Prairie Style File favorite Matt Mastrud of Punchgut Studio) and hearty and playful food, has been a fixture on the Bismarck-Mandan food scene since its debut in June 2013.

Now co-owner Tanner Helm is excited to bring Frackin’ Hungry Mobile Food Truck & Catering to the Fargo Food Truck Festival in Fargo on September 20.

“This will be our second trip out of town,” said Tanner in a recent interview for Prairie Style File. The truck stopped in Minot earlier this summer, but it can usually be found been serving lunches and late night eats to a cult following on their home turf in Bismarck and Mandan.

“We have pretty good notoriety in Bismarck-Mandan, but we’re excited to get out into Fargo, “ he continued. “Fargo’s kind of embraced food trucks, since they have a few of them already, and we’re excited to get our brand out the eastern part of the state.”

Tanner’s day job is with Cloverdale meats and he uses that experience to plan the menu and stock the truck with premium Cloverdale protein.

But the culinary team of Jake Schlagheck, Ryan Schmidt and Jaden Ustanko is primarily responsible for the creation and execution of the dishes served up to hungry customers.

The trio has over 25 years of culinary experience between them and they’re excited to introduce some of their new and favorite items to a different crowd.

So what’s on the menu? First up is the truck’s bestseller. “Our best selling item is our Pork Cubano Quesadilla Wrap,” said Tanner. “It started as a traditional quesadilla, but it was a little harder to eat.

So what we did was, take the same quesadilla, but we wrapped it up. It has pork carnita meat, shredded cheese, Canadian Bacon, onions, peppers and mushrooms. That gets wrapped up in a tortilla and grilled so it gets nice and warm and melty. “

Um, yum! The chefs are coming up with some new creations as well, like the Frackin’ Tacos.

“It’s kind of a play on an Indian Taco,” said Tanner. “We actually just deep fry a tortilla and then load it with the carnita meat, shredded cheese and lettuce and it is ridiculous. It’s maybe surpassed the quesadilla wrap as my favorite item now.”

They’ll also be serving BBQ ribs, a pulled pork sandwich, a caesar wrap, Fresh Cut Fries, Truffle Fries and an adorable little crème brûlée for dessert. All entrees are served with Fresh Cut Fries.

Isn’t a crème brûlée a little precious for a food truck with a blue collar vibe? Nah, says Tanner, with a grin so big you can hear it. “It’s kind of a play on the whole oil industry and fracking process – you have to get through the shale to get to the oil and with crème brûlée you have to break through that crust of sugar to get to the custard.”

He pauses and before getting to the heart of the matter. “And crème brulee is by far my favorite dessert –- and my colleagues’ too — so it was a perfect fit.”

The Frackin’ Hungry Mobile Food Truck & Catering menu is always evolving, which means customers across the region can enjoy their favorites dishes or try something new when they step up to the window.

And as the weather cools, the quartet has its eye on expanding the catering business. The truck offers a unique advantage to their catering customers – a portable kitchen that offers hot, fresh food that doesn’t take up space inside the venue.

Right now, the truck’s regular route and the catering expansion plans are centered in Bismarck-Mandan, but Tanner and the crew are hoping their presence at the festival will open doors with businesses and events in eastern North Dakota and western Minnesota.

“Hopefully we make an impression with the folks out there and they want to bring us out more often,” he said. “It (Fargo) is a two and a half hour drive, but it’s not that far, and we can potentially make that trip more often if there’s some opportunities that warrant it.”

Tanner encourages foodies to stop out and say hello, whether they’re in Bismarck, Mandan or at the Fargo Food Truck Festival. He and the crew at Frackin’ Hungry Mobile Food Truck & Catering are excited to show off their creations. And this Friday, he’s looking forward to being a part of the festival atmosphere.

“It’s almost like a State Fair feel, but it’s different. It’s not just that fried garbage that you get at a State Fair. It’s elevated, really culinary inspired meals that people are really gonna like.”
